You are greeted at the door even if the hostess is busy doing something else. First thing I will say is the service is excellent. This place kind of has that modern trendy feel that The Lemongrass has but more minimalist. All in all, a great, clean new phở place and definitely worth checking out! Only flaw was maybe too much sauce so the bread started to get soggy in the middle. The bread was toasted and It had a ton of meat and jalapeños - so good. I think it was $ 5 and i was stuffed after it. I had the chicken banh mi for the first time and was pleasantly surprised at how huge it was. The noodle salad bowls are crisp and flavorful and loaded with both veggies and meat. They definitely give you plenty of meat, and the broth is well flavored and not too salty. The small phở is a decent size for most ppl, so I would order that unless you have a huge appetite. They taste fresh and just made, and the peanut sauce is yummy. Spring rolls all have plenty of shrimp, lettuce, and noodles. So far, we’ve tried the spring rolls, various phos, chicken rice noodle bowls, chicken banh mi, and bubble tea. Love how the place is clean and well decorated - definitely one of the more «upscale» phở places in Lacey. We’ve been to Hot Ginger twice so far and both times have been great. I feel like it’s kinda pricey but it doesn’t bother me. I mean, I’d come back to try other stuff. There was so much that you had to constantly mix it so the syrup didn’t settle on the bottom. They used an excessive amount of syrup and it wasn’t mixed. On the second visit, I ordered the strawberry lemonade. I couldn’t bare to drink it even with how salty my phở tasted. Also, the water they give you to drink is not drinkable. ![]() I don’t use lime in my phở but I felt like I needed it to cover some on the saltiness. I felt like it was way more on the salty side than anything. I feel like they could have cut them in half to make it easier to eat bc when they’re hot, you’re gunna drop them on the plate more times if they’re bigger than if they were cut in half. I ordered the phở tai with no tripe, fried tofu and crab wontons. Came here on 2 different occasions both being about half a hour before they closed.
